well, there are many ways to go about making a zombie make-up...
assuming that you are not going to be doing any sculpture / moldmaking, i suggest the following:

get about a pint of liquid rubber latex
    tissue / toilet paper
    a hair dryer
get a couple shades of liquitex acylic paints (red / yellow etc, do you can paint the gore)
    a smooth surface
    some talcum powder

on a smooth surface, smooth the latex over the the tissue, lightly, using the hairdryer to cure the latex, you should end up with thin rubber coated tissue strips to use as skin..
apply the talcum powder to the dried latex tissue, this will keep it from sticking to itself and causing chaos when you peel it off..
cut or tear up the rubber tissue and pint one side of it red and brown or whatever you feel looks gross and rotting.

use more latex to apply the tissue (painted side down) to your face and hands or wherever and use the hairdryer again to dry it out fast, keep building it up and make sure the tissue dangles like skin.
you can use lumps and clumps or whatever you feel is twisted enough to satisfy, then touch up with more liquitex, you can use regular base makeup (ben nye is ok) to color your skin and the makeup a pale color and some green and brown for the rotting part.

tip: sometimes adding a little latex to the liquitex paint makes for a more rubbery paint that will not crack as easy.

in the end you should look pretty gross, be careful around the edges where the latex tissue blends into your skin, you do not want an obvious seamline, using a makeup sponge dipped in latex, you can dab over those lines using the hairdryer to speed up the curing process, doing this 4 or 5 times usually makes the edges invisible.

hope this isnt to confusing, its easier to do than it is to type.
